Easy Veganuary Doughnuts
Since 2014, Veganuary has inspired over 1 million people in 192 countries to go vegan for January.
The challenge is aimed to educate people about veganism by following a vegan lifestyle for the first month in the year. Being vegan can be pretty tough to maintain for many of us, but we shouldn’t assume that ‘going vegan’ means those nawty treats are off.
According to a study by Finder, 3% of the UK follows a vegan diet with this set to increase to 7% by the end of 2021. Now, we certainly don’t think every member of team HER are going to be vegan’s by the end of 2021, but we’re always keen to try out new tasties with less animal product. (And doughnuts? Er, yes please.)
Perfect for a cosy January night in, Coffee-Direct gave us this simple recipe for fluffy vegan doughnuts with a gorgeous coffee glaze. The best part is that you don’t have to fry – using a doughnut mould, just pop them in the oven!
Ingredients for 10 doughnuts
¾ cup of wheat flour
¾ spelt flour
¾ cup of plant-based milk such as almond milk
1 tbsp of apple cider vinegar
1/3 cup of sugar
1 tsp cinnamon
1tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
½ cup sparkling water
¾ cup of icing sugar
Dissolve 2 tbsp of coffee such as Golden Crema into hot water and allow to cool
1) Preheat the oven to 180°C
2) Mix the milk and vinegar together and let it sit for 10 minutes
3) Add all the ingredients in the bowl and mix well
4) Grease a doughnut mould and put the batter inside
5) Bake for 20 minutes and allow time to cool
6) Sieve the icing sugar into a bowl
7) Slowly add the cooled coffee and dip the top of the donuts into the mix
8) Allow to set and enjoy!
